PRUNE BARS - quick and easy

In a small saucepan, combine 1 cup brown sugar and 1 1/2 sticks butter or margarine.

Meanwhile, in food processor, pulse until prunes are finely chopped:

1 cup rolled oats (I use regular, not quick)
1 cup pitted prunes

Add and pulse until well combined:

1 cup chopped walnuts
butter-sugar mixture
3 cups rolled oats
2 tsp cinnamon
1/2 tsp salt
1 tsp vanilla extract

Press firmly (I use a rolling pin) into a greased 10 x 15 jellyroll pan. Cut before baking into 32 bars using a spatula edge or dull knife. Bake at 350 F for 20 to 25 minutes. Be careful not to over-bake. Remove from pan, separate bars, and cool on a rack.
